SPICY CHICKEN PASTA

Here is a great recipe I thought you might appreciate. My beautiful wife Linda created it and we use it with our wrestlers all the time. Our oldest son is about to graduate from college and was All-state in three styles of wrestling during his high school career. He always made weight and never missed a meal even though some of those meals were very precise; we always made sure he was nourished consistently during the day preceding his competitions. Using this recipe, he could leave workout the night before a weigh-in at a certain weight, eat this meal and check his weight the next morning staying at the same weight or below. He was nourished with a good tasting meal and consistently controlled his weight. We thought you might like a new idea for feeding your athletes the night before weigh-ins. Good luck this season. Michael Clapier Sports Training Media http://www.usasports.tv/ mailto:sportstraining@sisna.com SPICY CHICKEN PASTA 4 skinless chicken breasts – cut into bite size pieces 1 onion – cut in bite size pieces 1 green bell pepper – cut in bite size pieces 1 red bell pepper – cut in bite size pieces 1 package Fettuccini – cooked as directed on package. SAUCE: ¾ C. soy sauce ¾ C. sugar - you can also use honey instead or use both. 1 clove garlic - I use about ½ t. fresh garlic you find in a jar in the produce dept. or you can use about 1t. garlic powder. 1/4t. fresh ground ginger - I use the fresh ground ginger found in a jar in the produce dept. or you can use dried ginger. 1 t. crushed red pepper flakes - found in the spice section – you can use more or less – depending on how spicy you like it. Stir fry chicken pieces in Wok or fry pan in a little oil until chicken is almost done. Add onion and peppers and cook till chicken is done and peppers are crisp-tender. Add cooked and drained fettuccini and Sauce and cook till hot. *This is really fast, easy and good!
